The main thing is to choose the meat well

The ingredients of this stew are simple and the indisputable protagonist is the pork ribs, so it is important to choose ribs that are meaty. One option that still adds more flavor to the dish is to choose Iberian pork ribs.

You can also buy the whole rack of ribs ; in this case, the ribs must be separated with a very sharp knife. The task may seem difficult, but in reality it is not. You just need a little patience.

The importance of marinating early

It is very important to season the ribs and reserve them for more than two hours. In this way, the meat will achieve the desired flavor and when cooked, the result will be a dish with a lot of flavor.

In this sense, the ideal is to leave the ribs generously smeared with the marinade throughout the night, but with a few hours you will also get a certain taste. Of course, everything will depend on the time you have.

To marinate the ribs, put in the shredder: onion, garlic, cumin, salt, pepper, dried oregano and a dash of olive oil. Once the mixture has acquired a doughy consistency, the ribs are spread with it.

  • 3 garlic cloves
  • 6 potatoes (400 g)
  • 1 red pepper (30 g)
  • 1 green pepper (30 g)
  • Salt, pepper and olive oil
  • 1 kilo of chopped pork ribs
  • 2 small or medium onions (50 g)
  • 2 teaspoons of sweet paprika (10 g)
  • 1 liter and a half of homemade meat broth. It is prepared by boiling bones or pieces of meat, onion, celery and carrot in plenty of water for 30 to 40 minutes.

Preparation

  1. To start, finely chop the peppers, onions and garlic. 
  2. Then peel and cut the potatoes into chunks. Reserve in cold water.
  3. In a wide pot, put olive oil and when it is hot, brown the ribs on all sides. 
  4. Then, in the same oil, brown the peppers, onions and garlic for approximately five minutes.
  5. Then add the ribs and potatoes.
  6. Season with salt and pepper and add the paprika.
  7. Cover with the meat broth (add water if necessary).
  8. Finally, leave over high heat until it boils and then cook over medium heat for approximately 30 minutes.
  9. Serve and enjoy the delicious stewed ribs.

This is a slightly different version of the traditional recipe. In addition to the basic ingredients, it has tomato, carrot and white wine ; it is also delicious and very easy to prepare.

  • 1 onion (30 g)
  • 6 potatoes (400 g)
  • 1 carrot (20 g)
  • 1 tomato (30 g)
  • 3 garlic cloves
  • Olive oil (to taste)
  • 1 kilo of pork ribs
  • 1 red or green pepper (30 g)
  • 1 glass of white wine (200 ml)
  • Bay leaf, salt and pepper (to taste)

Preparation

  1. To start, finely chop the onion, garlic, pepper and carrot.
  2. Peel the tomato and cut it into small cubes.
  3. Then put a little olive oil in a pot and when it is hot add the onion and garlic. Let it brown for 2 or 3 minutes.
  4. Then add the bell pepper and carrot. Continue browning for 2 to 3 more minutes.
  5. Add the tomato and stir. In the case of excess acidity, some sugar can be added.
  6. Add the chopped ribs, stir for a few minutes and dip with a glass of white wine.
  7. Then leave over high heat until the alcohol evaporates (approximately 2 minutes).
  8. Season with salt and pepper and add a little water (what is necessary to cover the preparation).
  9. Add the bay leaf and wait for it to boil. Lower the heat and cover.
  10. Cook for about 30 minutes.
  11. Meanwhile, peel and cut the potatoes into chunks.
  12. Once that time has elapsed, add the potatoes and cook for 15 more minutes. Add a little water if necessary.
  13. Serve and enjoy the delicious stewed ribs.
