Omelette Stuffed With Tomato And Tuna

The omelette stuffed with tomato and other ingredients is one of the easiest preparations to make in a short time and, always, with a wide margin for improvisation. It can be accompanied by a rich mixed salad, a smoothie, a juice, a couple of slices of bread and much more.

There are those who decide to substitute tuna for other types of fish, such as: rooster, hake or trout. In the end, you decide which one you fancy the most!

Ingredients (8 servings)

  • 3 kg of potatoes.
  • 4 tomatoes (360 g).
  • A pinch of salt.
  • 8 eggs (480 g).
  • ½ kg of zucchini.
  • 1 cup of milk (100 ml).
  • Vegetable oil (necessary quantity).
  • Grated Parmesan cheese (to taste).
  • 1 tablespoon of baking powder (10 g).
  • 5 small cans of tuna in oil (480 g).

Preparation

  • Peel the potatoes and cut them into thick squares.
  • Peel the zucchini and cut them to the same size as the potatoes.
  • In a frying pan, fry all the ingredients until lightly browned.
  • Meanwhile, in a bowl, poach the eggs and mix with the milk, salt and yeast until smooth.
  • When the vegetables finish frying, remove the excess oil and pour the previous mixture.
  • Cover the pan and cook for 20 minutes on each side.
  • Remove and let cool.
  • Cut the tomatoes into slices. Also, drain the oil from the tuna cans.
  • Cut the tortilla in half, as if it were a cake.
  • In one of the layers, put the tomatoes and on top spread the tuna and grated cheese.
  • Cover with the second tortilla (to call it that) and sprinkle more grated cheese (you can also add mozzarella cheese).
  • Bake a few minutes so that the cheese is gratinated.

In this case, in addition to the main ingredients, we will add another one: the ham. The result? More than delicious. You can not lose this!

Ingredients

For the omelette

  • 4 potatoes.
  • 6 eggs (360 g).
  • ½ onion (30 g).
  • A pinch of salt.
  • Olive oil (necessary quantity).

    For the filling

    • Mayonnaise (to taste).
    • 6 slices of ham (80 g).
    • 1 tomato or pepper (30 g).
    • 2 small cans of tuna in oil (160 g).

    Preparation

    • First, you will prepare the classic potato omelette: peel the potatoes and cut them into small cubes.
    • Julienne the onion and mix with the potatoes. Put the salt.
    • Put oil in a frying pan and add the previous ingredients to cook, but without frying.
    • Beat the eggs and season to your liking.
    • Skim off the excess oil and pour the seasoned egg on top.
    • Cover the pan until the tortilla is separated from the base, turn using a plate and continue cooking so that both sides are golden brown.
    • Turn off the heat and reserve.
    • While the potato omelette is cooling, cut the ham into strips and mix with the mayonnaise and tuna.
    • Cut the tomato or pepper into slices.
    • Open the tortilla in half and arrange a layer of tomato (or pepper), then spread with the tuna cream, ham and mayonnaise, cover with the other half of the tortilla.
    • You can eat like this cold or hot, if the mayonnaise is not heavy for you. Sprinkle grated Parmesan cheese on top of the tortilla and bake until gratin.

    It is the same as the first recipe, with the difference that some lettuce leaves (of the type you want) are added to the filling. It should be noted that you can prepare it with or without zucchini.
